Here’s a lovely chia pudding if you’re looking for a breakfast that is light and creamy. Chia seeds are a powerhouse of nutrients, they are packed with protein, rich in fibre, omega-3 fatty acids, and a good source of magnesium, manganese and phosphorus – essentially excellent in supporting digestive health, blood sugar balance and heart health. 

Ingredients

Serves 2 

50g chia seeds

240ml almond milk (or coconut milk)

2tbsp coconut yoghurt

1 tsp vanilla extract

2 tbsp blueberries (fresh or frozen) 

Method

Mix all the ingredients together. 

It takes about 1 hour for the chia seeds to absorb the liquid and turn into a pudding. 

Best left in the fridge overnight. 

Stir before serving and top with fresh blueberries, and your favourite nuts and seeds or muesli.
