Cherry and Cashew Protein Balls

By combining clean proteins with healthy fats from cashews and prebiotic fiber from flaxseeds, these bites help manage blood sugar fluctuations and support muscle repair. Additionally, the antioxidants in cocoa nibs and cherries help protect healthy cells from oxidative stress while providing a gentle, slow release energy source.

Ingredients

Makes 20 balls

  • 1 ½ cups Raw Cashew Nuts

  • 1 cup Dried Cherries (unsweetened/no added sulfur)

  • 3 scoops High-quality Protein Powder (Whey or Plant-based)

  • ½ cup Dried Dates (pitted)

  • 3 tbsp Ground Flaxseed

  • ½ cup Raw Cacao Nibs

  • 3 tbsp Desiccated Coconut (or Raw Cocoa Powder) to dust

Method

    1. Grind the Nuts: Place the raw cashew nuts in a high-power food processor or blender and pulse until they form a fine, breadcrumb-like consistency. (Be careful not to over-process, or they will turn into cashew butter!).

    2. Form the Dough: Add the dried cherries, dried dates, protein powder, and ground flaxseed to the processor. Blend until the ingredients fully combine and the mixture clumps together to form a stiff dough.

      • Tip: If the mixture feels too wet or sticky to roll, add a little more protein powder or ground flaxseed. The consistency should be firm but soft and slightly pliable.

    3. Roll the Balls: Scoop out small spoonfuls of the mixture and roll them between clean, slightly damp palms into walnut-sized balls.

    4. Coat for the Festive Look: Place your desiccated coconut (for a festive “snowball” look) or raw cocoa powder on a flat plate. Roll each ball in the coating until evenly and beautifully dusted.

    5. Chill and Set: Place the coated balls on a parchment-lined tray and set them in the fridge for 30 minutes to firm up.
