Cherry & Cashew Protein Balls
By combining clean proteins with healthy fats from cashews and prebiotic fibre from flaxseeds, these bites help manage treatment-induced blood sugar fluctuations and support muscle repair. Additionally, the antioxidants in cocoa nibs and cherries help protect healthy cells from oxidative stress while providing a gentle, highly bioavailable energy source during active therapy.
Ingredients
Serves 20
-
1 1/2 cups cashew nuts
-
1 cup dried cherries
-
3 scoops protein powder
-
1/2 cup dried dates
-
3 tbsp ground flaxseed
-
1/2 cup cocoa nibs
-
3 tbsp desiccated coconut (or cocoa powder) to dust
Method
-
-
Grind the Nuts: Place the cashew nuts in a high-power blender and grind until they form fine, breadcrumb-like consistency.
-
Form the Dough: Add the dried cherries, dried dates, protein powder, and ground flaxseed to the blender. Blend until the mixture clumps together to form a stiff dough.
-
Tip: If the mixture feels too wet, add a little more protein powder or ground flaxseed. The consistency should be firm but soft.
-
-
Roll the Balls: Scoop out small spoonfuls of the mixture and roll them between your palms into walnut-sized balls.
-
Coat: Place your desiccated coconut (or cocoa powder) on a flat plate. Roll each ball in the coating until evenly dusted.
-
Chill and Set: Place the coated balls in the fridge for 30 minutes to firm up.
Notes & Storage
